Press [J]: every trade in the village, and how many hands it has
A village of thirty people has thirty pairs of hands and more than thirty jobs. The work panel, on the [J] key, is where you decide.
It lists every trade in the village with the number of people in it: woodcutters, farmers, builders, carriers and the rest. Take two from the fields and give them to the building site, and the house goes up faster while the harvest comes in smaller.
Stock limits keep it sane. Tell the village to stop cutting firewood at a certain pile, and those hands are free for something else until the pile drops.
Tools matter here too. A villager with a tool in hand does twice the work of one without, and tools wear out. A good smith is worth several woodcutters.
